I'd recommend Yellow Dog Linux.  Since you are making this a dedicated
server, I would use a standard text interface for it (YDL will ask during
install).  If you go to the Linux documentation project (use google to find
it), you'll find a lot of information about setting up a email server, etc.
The YDL site isn't near as informational as the other.

If you just want the ability to use something like PopFile, then the machine
doesn't have to be an actual email server (i.e. it doesn't need to store the
email), you just want to get it up, make sure it can access the internet,
and then install and configure PopFile for remote connections.  It only goes
out and looks for email when your email client asks it for email (i.e. email
client --> Got new mail? --> PopFile --> Got new mail --> Your real email
account).  This is why I used a cheap old 68k Mac, because its running with
a 250 MB hard disk, and consumes about $2 of electricity a month.  Pretty
cheap spam filtering.

Popfile doesn't support MacOS natively, yet.  However, one could probably
muddle with it and get it to work in some capacity since its 100% perl
based.
