I was searching for more ideas to try and figure out the problem, and opened
the Monitor Control Panel directly, and changed the setting to show "All"
possible resolutions, and there was the missing resolution!!

Highlighted that missing resolution (1280 x 1024, 60Hz), and now the monitor
is back to the previous setting.

I'm still curious though -- How could that setting have disappeared in the
first place? There were no error messages to indicate that there were any
problems.
