Any advice is greatly appreciated as I really want to give this Mac a
new lease of life!

I would suggest a G3 B&W with a 900MHz G3 upgrade or a G4-500 upgrade. It can run OS X nicely. This is one area the PCI Power Macs and 603/604 Systems fall very short of. I have a 8500 that I have started upgrading for my daughter and I share some of your questions.

Bang for your buck...

- G3 B&W REV 2
- G4 - 500 Mhz processor upgrade
- Radeon 7000 Vid Card

It can run USB 2, Mac OS X, Burn DVD's. It is a nice solution. So nice in fact it stops me daily from purchasing an I-Book or G5 - 1.8 GHz.

My second system is the 8500 with mac OS 9.1. I prefer the G4 over the 8500.

Careful in investing money on pre-g3 macs since they can not run Mac OS X (supported).
