Is it true that if you plug in the power to a Mac without something in the ADB port that the power supply shorts and basically "self-destructs?" I don't know where I heard it, but it would be good to know.

NO! Some power supplies will self destruct if they have no load, that is the DC power cable isn't connected to the logic board. But not connecting the ADB, no that isn't going to hurt something.
