I am considering getting an ATA/IDE PCI card for my PM8600/G3 in order to install a larger hard drive. When I am looking at PCI cards, does it matter if the card is designated for Windows or Mac?

I would say yes it matters. I'd go to OWC and look at one of their ATA PCI cards. It's not worth the trouble getting a PC branded card and going through all the trouble flashing it to get it to work or having it not work at all.

Do these cards require separate drivers to operate or will the computer automatically recognize them?

No. Your mac should see it as a separate SCSI interface. Plug and play...

Aside from installing a USB card some years ago, I haven't dealt with PCI cards a whole lot.

Easy stuff. Just make sure you take the usual precautions of grounding yourself by touching the power supply, pull the card straight up and push straight down to seat the new one. Don't wiggle it from side to side. It should pop right in and work. If you've got more than one drive, make sure it they're configured correctly for master and slave.
