I have an 8500 with a 200mhz 604e, well did. It's a G3 333mhz now!. The only way i know of putting OSX on the system, is via the product Sonnet sells. I've tried the Xpost what you call it and it didn't like the systems CDROM. Note, this was the original SCSI CDROM that came with the system, back when it was originally an 8200..So you might do better.
I'd highly recommend you either buy an ATA card for you 8500, or upgrade to a B/W like i did. While the 8500 is a good system, (heck i don't want to part with mine!). The machines bus speed is a big hurdle at 44-50mhz..
My personal recommendation if you don't want to part with the 8500. Is get the following:
PCI ATA card + some IDE devices, hard drive, cdrom
G3 Accelerator, 300Mhz or greater (to handle OSX)
Sonnets OSX compatibility card (Least i think it's a card)
And make sure your video card supports OSX, i know my voodoo 5500 doesn't.
Anyways there are people on here that know a lot more then me. But thought i'd offer my opinion
