Get a PCI video card (saw one in an Apple store. Seems to me it was
both Video AND TV-tuner. But I might be wrong about the TV part). New
cards should be X-compatible.
And of course, Video capture EATS disk space.
Now, you didn't say whether you were using the 7500 under X or 9...

Bummer. What would I need to get some decent video capture going on
one of my computers?

Well, if the show is short you will be OK. However, the format that
the 7500 captures by default, with the original Apple Video Player
software will require a BIG honking disk for even 1/2 hour of show.
Also the frame rate will not be too good, but it can be done.
I did it on a 6500 just to give it a try, but...
