Try a newer Gem... (IE one of the "nightly" builds of pd-extended)

That is the way to do it, but your version of GEM is maybe too old:

[menubar -1<
 |
[gemwin]

I recall "-1" make the bar show up again when you mouse over the top of
the screen, "0" means no bar no matter what.
