Cocoa is what Apple calls their native GUI toolkit. Pd uses Tcl/Tk for the GUI, so its not Cocoa. Apple Mail is definitely Cocoa, as are basically all of the apps that Apple includes. Something like Firefox is not a Cocoa app.
