Chris,

You want to install an OS X Distiller printer. Then you can select this for
printing PS files from any application to run through Distiller.

1. Open Print Center

2. Select 'Add'

3. Select IP Printing

4. Location enter:  localhost

5. Use Default queue name or rename as you like.

6.  For printer type, select 'Other' and browse to the location of your
Distiller PPD file. I'm still using v5 so I initially set up mine by
browsing over to my OS9 System folder:Extensions:Printer Descriptions, but
this file can be located anywhere.

7. Click Ok and it's a done deal.

When preparing PS files from an application, you'll have to select 'Output'
and check 'Print to File' as 'PostScript'. You can save this configuration
and then select it whenever you use the Distiller printer.
