Using Mac OSX Quartz PDF features, PDFs will be Acrobat 5 level (PDF 1.4).
Using Distiller 6, PDF compatibility is the first option to set in the General panel, when editing JobOptions.
Using Acrobat 6, just use the "Reduce file size" item (File menu) and select the required compatibility level.
Using InDesign, "Placing" (importing) Word documents instead of copy/pasting should really save your time...
