If you want to bring everything to grayscale, the the Tool "Quite a box of tricks" from quite (www.quite.com) is any eays tool to do that.
if you are looking at a more sophisticated tool that also handles colors quite well, I suggest the SuperColor from Heidelberg.

We are printing to Cannons - imageRunner8500 and imageRunner105.
However, the problem has to be fixed on the file end of the process. We have
several facilities world wide that have to be able to print the files so we
cannot have special ways of getting the file to print. It just has to go.
We decided to contact the client to try to get them to fix their native files since there doesn't seem to be a good fix. Thanks for your help.

You don't really provide enough information about your printer. Whatare you using, and how is the PDF failing to print?-
If you're using a PostScript b/w printer, you could print as an image.
You could also select Print > Advanced and select composite gray.
You can redistill using the PPD from a PostScript black and white printer.
But Leonard is right...this is not your best choice to solve this problem.

method that is NOT approved of by Adobe - then you will need to find a
grayscale PPD...
OR better, use a 3rd party tool such as PDF Enhancer (http://www.apago.com/enhancer.html) or Quite a Box of Tricks (http://www.quite.com).
