I've got an appraisal report form with about 900 fields in it. One of these fields is a comment addendum in which a single rtf-enabled field takes up almost the whole page. Text entry slows down dramatically after about half of the page; I'm typing behind about 3-5 characters all the time. This is on a slow G4 Mac, and Acrobat 6.0 Pro. Don't know whether there's an actual limit, but there is a practical limit in a single field. Your mileage may vary, depending on platform and processor speed.
