As to making sure it is "press ready", you should be using a preflight tool such as the one in Acrobat 6 Professional or a 3rd party solution...
I'm confused by options. You can make a PDF within Illustrator. Is that good for use by newspapers?
Which newspapers? Each one has their own set of "requirements"...Have you asked them for their specs yet??
