PDF-Text-Extractor may do what you need. http://www.pdfstore.com/details.asp?ProdID=702 It has several text exporting options (entire file, single page, page range) and will export all words or only a certain number of words per page or per file. It exports text to a .txt file. It can aggregate the text from several files and merge the text into a single .txt file.
