Hi there Carol, If you save the EPS with PostScript Level 1, this avoids one problem - older versions of Quark XPress can separate them when you turn on Separations - many PDF files can contain compression and colorspace descriptions that can be translated into PostScript 2 or 3, and while there are advantages to writing PostScript using Level 2 or 3 operators, some applications can't parse them or separate them properly when imported or printed. I just tried using Acrobat 5 on OSX to convert a composite Hexachrome PDF which contain 6 channel color images and made an eps using these settings and it worked fine; http://www.jahn.org/DeviceN/EPS_Settings.pdf Hope this helps...
