I believe that PitStop (http://www.enfocus.com) will let you edit text in this manner...
According to Acrobat the font is a Type 1 PC font, Frutiger47LightCn, Bold, and the PDFs were created out of CorelDraw.
Why not just go back to CD and edit there?
