I recommend that you use something like OpenOffice to open the files, print
them to a PS printer driver which writes them to a text file.  You can then
take that post-script file and run it through GhostScript.

Simple... providing your office suite can open the files and is scriptable.
And you have a PostScript printer driver, and you can get GhostScript
installed and configured... and...

Okay, so it's not so simple.
