I have the Adobe 6.0 SDK, but don't know quite where to start to find out
how to call this COM object and then to have it "listen" and accept the
string and use it to fill in the PDF fields.

First, is this a desktop or server-based solution? It sounds like it's a server, in which case you may not be permitted to do this based on Adobe's EULA. You should read the EULA and determine that for yourself.


Second, you won't be able to "just pass the string" - you will need to parse the string into field/value pairs and then you can set the values of each field.
