Yes and no. The line that says "Date:" under the "To:", "Subject:" and "From:" lines displayed at the top in each email message is set by the email *client* (the software on your computer) and is usually taken from a setting in the operating system. The time and date in the "Received" lines in the email header is set by each (there may be several) SMTP server your mail passes through. Usually, these header lines are only visible by activating special settings in your email software.
