I have assisted on jobs done by people who do this for a living. It is not done with ambient light. To do it right you need enough lights (heads, packs, reflectors, soft boxes, umbrellas, grids, etc. ) to light the space. A flash meter with multiple light sources is a must, particularly if you don't have a Polaroid back. It is also very hard to make it look right if you don't have a tilt/shift lens.
