I assume the interpolation done in-camera is on the RAW data from the
r-g-b pixels of the CCD. In the case of the Fuji camera this is a Fuji
"Super CCD" with pixels arranged in a hexagonal pattern, rather than the
standard bayer pattern of conventional CCDs and CMOS sensors. I'm not
aware of any computer software that can work on this data directly,
hence it makes sense to do this in-camera.
