Go with at least some darkroom work. Kids need to work with their hands. Also, as has been pointed out, the cheaper digital cameras are far too automatic to do basic exposure stuff. Most kids will like the magic of the picture appearing. Then do all of the color issues using PS. Showing the pictures decomposed by color channel teaches them about light as well.
