I prefer the first shot, but for reasons of composition rather than exposure. I doubt that you would have gotten anything better on film. You're getting substantial latitude here, and the results look very good. If you wanted more stretch you could tweak it in PS with shadows and highlights, but I think the high contrast nature of the image is part of what makes it work.

I tried slower shutter speeds, but, that only resulted in ruining the
interesting clouds in the sky, which are the whole reason I took these
shots. Any advice on how to get a better exposure in this situation with
digital would be appreciated, though, I imagine there is nothing that can be
done except to shoot film.
