Canon's good enough for most people. Nothing wrong with that.
I just don't want to buy what most people buy.
Look at the bright side. You won't  have to share your precious Pentax
lenses with her :-)

My gf is ready to upgrade from her 5Mp Optio to a digital SLR. She
wants more control, better lenses and the option to focus manually.
She's not willing to shoot film, having had a digital camera for a
while now.

Of course, as any god-fearing PDML member and Pentax user would do, I
recommended an istDs. The problem is that the best price for the istDs
with an 18-55 seems to be $999 here in the USA, while a Canon Digital
Rebel can be had with a similar lens for about $780. She thinks the
Canon is bulky and ugly, but money is an issue. She won't take my
offer to pick up the difference, either...

The only reason for her to go Pentax are the lenses she could borrow from
me.

PDML members, I need you to give me more reasons to turn her away from
the dark side!
