That's the most important thing, and why I'd suggest sticking with it.
Theoretically you should edit in a device independent colour space (eg Adobe RGB or sRGB). If you want to preview how the colours will look when printed, you can do all of your editing with soft-proofing enabled - it is in the soft-proof setup where you specify the lab's profile. I think this needs Photoshop 6.0 or above.
If you intend to archive your digital files then they should definitely be saved in a device-independent space in case you need to get them printed somewhere else.
