I have the same book. Highly recommended. It truly enabled me in the use of the RAW converter. I think the full name is "Camera Raw with Adobe Photoshop CS." It's part of the Real World series. As Godfrey said, the author is Bruce Fraser. His explanation of how the various adjustments interact is invaluable, as is much of the other information that can be found therein. Five stars.

I want to take a folder full of RAW files, preview them,

What 1 or 2 programs will allow this workflow at an

As most of you know digital processing and RAW
files are new to me, I met my first RAW file when I got
the D.
I have PhotoShop CS and have tried several other
programs.

Photoshop CS will do it all for you. You need a book: Bruce Fraser, "Real World Camera Raw"

That will show you not only what to do with RAW files but also how to build an efficient, automated workflow with all the facilities of Camera Raw and the File Browser.
