Consider the instantaneous peak current demands which would be created when the
camera has a full buffer + post processing running + writing to a Microdrive +
recharging the flash circuitry with display back-lighting on, 3A max doesn't
sound like such overkill.

True... but that's why it's so hard on batteries then. The flash recharge is particularly telling. That's running close to the 1C rate on the batteries, so they're only ~60% efficient. Since the official supply is switching, it'll have to be designed more or less to peak, whereas a linear supply can probably get away with a high power transient.
