Not true. Mac OS X v10.3.8 works very nicely on the PowerBook G3/500. It doesn't struggle at all. It was a bit sluggish on the original 10G 4200rpm drive, but I replaced that for a 7200rpm 60G drive a while back. The system has 768M RAM in it.
It certainly isn't as snappy as a 1.25Ghz G4, but it's fine for an older system. It's what I've been using for everything the past two weeks or so while I've been moving. It's a little lacking in compute power when it comes to running Photoshop CS and processing RAW files, but I've had lower performance systems in the past.
