Normally, I let the customer tell me what he wants, and yes, it is a science.
I think it's called communication.
I have had a few situations where in order to keep one criteria, another has to suffer.
For example, if the customer specifies an 8x10, but that print size means a fatal crop to the image, I have to either drop the order and await correct instructions, or do a best print possible.
Sometimes, the customer doesn't like what I come up with. People do tend to shoot the messenger, especially when that messenger is telling them they can't have what they want.
I can't speak to your example. It may be the lab erred, it may be something else.
