all the good panorama programs reproject the lens onto the surface of a cylinder or a sphere and correct for distortions including a fisheye's severe barrel distortion. if using Quicktime or for printing, the proper projection is cylindrical. i regularly shot 3 or 5 image 360-degree panoramas using my Nikon Coolpix 995 with the fisheye adapter lens.

I would think, you should be able to shoot it with a lens as wide as around 24mm and avoid distortion.
