The easy way is to just buy a 6x17 ;) Scanning's a bit harder though...
BTW with the 6x7 it's always manual unless by 6x7 he meant 67II. For
night shots you're probably using B as the shutter only goes to 1
second. I'd be stopping down to at least an 8 second exposure if I
intended to stitch, otherwise it won't take much of a mistiming to
cause noticeable exposure differences.
Having said that you'll see other effects as well, eg light falloff
if using a wide-angle lens or even the light itself changing after
sunset (it's quite surprising how fast it does change).
