Faster cards can transfer data more quickly, but their effect on camera operation is limited by the camera. However, a faster card in a USB 2.0 card reader will transfer data to your computer more quickly, so there is some benefit in buying them.

However, I find that the price/performance balance of the 60x SD cards is fine, and it is currently the sweet spot in 1G SD card pricing as well, so I stick with 60x SD cards for the DS.
