The Patterson tanks are likely leaking infrared light.
Other things though:
Dark bags don't offer much protection, and the canisters themselves are
prone to light leakage (the felt lips don't offer IR protection).
Neither camera has a DX window, and both have metal backs, so you can pretty
much rule out the backs leaking.
I would load and unload the camera in the darkroom, and try processing with
the Patterson tank in a darkened room (even under safelight should be OK) or
else use a steel tank with a steel lid.
IR film can be pretty finicky
