It's not really a separate process...you're probably thinking of
Panalure paper, which used to be the only paper you could use to do
this. Oriental makes a paper to do this now too...I guess you'd call
them chromogenic papers. I've heard the Oriental is nice, but of course
all these papers are evil and anyone who wants a b+w print should be
elbow deep in hypo and sleep on 100 pound bags of dektol. 

Just tell them you want a b+w print from a color neg, and make sure they
don't print it on regular b+w stock.

You can also do this digitally, of course.
