I normally use a messenger bag to carry all the stuff i need. In the 
summer i use a Camelbak MULE that can also take a camera inside it.

On touring bike i use a handlebar mounted Ortlieb waterproof case. There 
also comes a removable map case with that case. The map case is very 
durable plastic and if it gets really wet you can put your camera in 
that map case, it´s large enough for an SLR too.

more of those quick release handlebar mounts for that case, so i could 
use the Ortlieb on other bikes too... It´s so nice not  having to carry 
anything on your back  :)
