If you want to change ISO or AF mode, which is done by
pushing the button and rotating the rear dial, you need almost a third
hand. It's awkward. Especially when you have a big 1.5kg or more lens
attached.

It's a one handed operation for me: push button with right index finger, turn dial with right thumb. It's never been awkward even with large lenses.

And in the prosumer models, you still _don't_ see the ISO/WB in the viewfinder.

This is more of a problem, I agree, but I'm still in film mode and forget that I have a choice of ISO (usually I shoot at 100 or 200) and WB is always "auto" as I shoot RAW anyway.

If I pick up a good DSLR I fully expect to be able to shoot with it
fully one minute later at most.

It's never been a problem for me. I've always been able to play with friends' new cameras and figure out how to set/control them before they could.
