Good question. I don't know. I haven't taken much of a look at any of those you list. I've flicked through Jeff Bridges' book, and was quite impressed. Yul Brynner had a book published didn't he? I don't remember any of his pictures though. I think I saw some of Dennis Hopper's in a Sunday suplement last year, and enjoyed them but again, I don't remember any of them.
Apart from Helena Christensen, all those you've listed are in the quality end of the film industry, so by virtue of that they are highly visually-oriented and probably very intelligent. But HC is also in a very visual industry, and I think she has more than the normal model's allocation of grey matter. That makes it hardly surprising that they should be good photographers.
