Jack, This sculpture is in a shop in the San Francisco Chinatown so there's not much scope for taking time to set up a shot.
So far what I've understood is to: 1. Isolate some part (center figures.) 2. Increase the DOF. 3. Increase the exposure to get the figures closer to white. I'll probably head over there this weekend and try again if it's still unsold. Thanks.
