They are actually easier to use in AV mode. Since they have only one
aperture setting, setting the camera to AV mode will force open
aperture metering. The camera will adjust the shutter for each
exposure by pressing the shutter button. There is no need for the
extra "manual" step of measure the exposure (green button or AE-L).

Ah, very true
But I still like M. It's useful if the metered exposure is out by more than two
stops (happens often when taking moonlight shots, and you want to keep lunar
detail).

Sure there is a use for M mode but the camera is not going to meter
any differently using green-button/M mode and AV mode.
Actually it will, Av meters continuously and M sets and holds.
