I imagine a number of other people will recommend this, but here goes: "On Being a Photographer" by David Hurn and Peter Jay. There are no photos in it.
If you'd like to like at a book of photos, I would suggest Magnum Stories. It's too big, of course, but it is a collection of essays and writings about those essays by Magnum photographers through the years.
