Jens, with the mode dial on M, simply set the aperture with the aperture ring on the lens and press the AE-L button and the camera will set the correct shutter speed for the scene. When the scene changes, just hit AE-L again. You must first go into the custom menu and set "Use Aperture Ring" to "OK" though. Just leave that as the default.
