The restaurant owner did the styling, Bob. It's true, Paul, that some front fill is missing. We did use front fill (reflection screen), but obviously not enough. The "stylist" was attending the the screen, but she had difficulties in actually seeing what happened. Initially I did some test shots: Using af softbox (main) from behind, and a softed, weaker flash on the camera. It's normal for a food stylist to work with the photographer to make the food look better and improve the composition. One of my friends was an assistant to a food photographer for several years.
