Since the size of an uncompressed PEF from my DS is pretty similar to the size of a compressed DNG from the K10D, I assume testing speed with an uncompressed PEF from my DS could give me a pretty good idea about what to expect.

If your computer can handle processing *ist D/DS/DL RAW files, it will also work fine for K10D RAW files, either PEF or DNG format in whatever tools you enjoy using that can digest them. Any difference in speed is insignificant unless you're processing 100 RAW files at a time.
