My archive system is two 500G external hard drives. All changes to my  
work is backed up onto them daily, and they mirror each other. I  
don't have any of them in a safe, but if there were a fire or  
something that I had two minutes to do anything, all I have to do is  
rip the power and connection cords off one of them, grab that, my  
system backup and my laptop, and run out the door. I'll have  
everything that way. (My financial data, address book, etc is also  
backed up onto a secure network volume every morning automatically,  
so I can get to it any time I can get to the internet with any Mac OS  
X computer.)

For photo projects, I also write a DVD copies when the work is  
completed. Safety in replication.
