While in Nova Scotia Scotia, take the Lighthouse Route from Yarmouth (Nova Scotia) to Halifax. You'll be stopping about every 10 minutes, marvelling at the scenery and quaint villages. Shelbourne, Mahone Bay, Lunenburg and Chester are all lovely, quaint former fishing villages with good restaurants and antique shops. As you near Halifax, you have to hit Peggy's Cove, with it's iconic lighthouse and waves crashing off the granite rocks. Halifax itself is a lively, urbane, sophisticated city with plenty of good restaurants, interesting museums (Pier 21 was Canada's Ellis Island and is now a lovely museum - look at the Maritime Museum of the Atlantic as well) and a wonderful waterfront/harbour area. I've never been, but I've heard that the Cabot Trail in Cape Breton is among the most scenic highways in the world rivalling that oceanside highway along California's coast which number I can't remember now. I don't know New Brunswick so well, but the city of Saint John is supposed to be nice, and the drive along the Saint John River valley is lovely in parts. Hope you have a good trip and take lots of pix!
