The default insert is one deep padded sleeve. Since the Canon 24-70 is pretty bulky and has a big, deep hood, I presume that Cotty has the hood reversed on the lens when in the bag (it wouldn't fit otherwise) and put the insert in the center. Then the camera can be nose down into the insert with one lens on it and the other two lenses in the openings on either side, much as this person sets his up:

If that's not how you've set it up, Cotty, I'd be interested to see... :-) Personally, I feel the F803 is a little unbalanced when set up this way and I find it awkward to get the camera out. Plus, set up this way there's no room for all the other junk I need to carry.
