The .xmp "sidecar" file contains the data pertaining to the RAW files
image conversion settings, ie exposure, contrast, WB etc. Deleting it
will delete the conversion settings for it's associated RAW file.

In Adobe Bridge you can go to to Edit>Camera RAW Preferences, under
"Save Image settings in:"  you can change it from "sidecar ".xmp"
files" to "Camera RAW database" (not having used this option I'm
assuming all the RAW conversion image settings are saved in one
database file, but I'm not sure)

Or you can work with .dng files that have the image settings embedded
into their file.
