Bill, be careful with some non-Epson papers.  The Epson black (on my Stylus 
Colour 800) tends to go bronze on Pelikan paper almost before it's dry, which 
is not a good look!

For trial purposes, I'd strongly recommend buying the least possible quantity 
of any other brand than Epson .

And yes, if the paper is listed you will be able to use it.

I believe the difference is that a pigment ink contains minute particles of the 
colour suspended in a carrier, and the colour is thus deposited on the printing 
surface when you print.  Dye inks will presumably place something like a colour 
wash on the paper.  I'm open to correction on this, obviously!
