A general rule of thumb I read on a motorcycle-based mailing list once was: "If it is small enough to eat in one sitting, it is not worth the danger of swerving to avoid it". I tend to stick to that rule when things dart out in the road in front of me - and haven't hit anything yet (thank goodness!) Don't know for sure where a raccoon fits in that rule, actually. Some of them are pretty big.
